Søren Ewald Fossum has dreamed of opening EWALDS Brasserie in Frederiksberg since he, as a kid was apprenticed to his grandfather, the butcher Slagter Lund.
At EWALDS you get Søren's favorite dishes prepared with inspiration from the times in the kitchens at Le Sommelier, Gorilla and Bistro Central.
